Gonzalo Guerrero is a character referred to in the first texts about the arrival of the Spaniards in present-day Yucatan and is known in that part of Mexico as the father of miscegenation. We could speculate that, furthermore, he was the first European to mix Castile vinegar with chili peppers and other fruits and vegetables from the land because, without a doubt, the dressings, seasonings and spices were more than just a simple whim or excuse for those expeditions.

Gonzalo Guerrero survived a shipwreck prior to the arrival of Hernán Cortés. Years later, when he arrived, he had already acculturated and was living among the Mayans of Yucatan. Bernal Díaz del Castillo in his True story of the conquest of New Spain records his words when they send for him: "Brother Aguilar, I am married and have three children. They call me chief when there is war. My face is carved and my ears are pierced. What will those Spaniards say of me if they see me go like that? God, you see that these little children of mine are pretty and give me for your life one of those green beads to give them and I will say that my brothers send them to me from my land...". Gonzalo Guerrero had already found the true treasure of those lands, his people and culture… surely part of that treasure is sauces like the ones we present here.
